I don't think you can. When you play PS Now with a DualShock 4/Sense anyway, motion controls are locked out. You can't use motion controls with a PS4/PS5 controller on PS3 because the system reads it as a basic USB controller. Hmm, kind of a pity, but I didn't even think about PS Now and the lack of motion controls.
