Fire and dark are different, you can still use regular pyromancies on bosses resistant to dark. I played a pyromancer my first time through. Old Demon king is the only boss that should realistically give you troubles. Pyro makes the late game absolutely ridiculous because of how easy it is. You will mostly struggle on earlier bosses.
