Hello I have a one foot pellet pipe where the inside tube diameter is 1/16" less than 3 inches. It goes onto the Pelpro stove vent pipe just fine. So to do it right I bought a pellet stove appliance adapter by duravent. Not the Duravent pro line. This adapter has the rop gasket like all the other pipes.

The Jackson model stove (the one I'm assuming you have) is the smallest stove they make. It isn't going to win an award for heat production and most of your heat is going out of the vent. Nothing will fix that in settings. Your best bet is reset it back to factory settings and move the probe/wire away from the stove. Set the temp and let it go.
