On my original save of BOTW I didn't start the champions ballad. This was on my Nintendo account profile. I created a new save on my guest profile and did the champions ballad and have it as my definitive run as I got all the shrines, 1/2 koroks, outfits and spent like 300 hours.

Try searching for that. No, sorry, but fyi -master mode is a second save file, they don’t overlap -creating a second account gives you another 2 saves (normal/master). I use my japanese account for messing around or starting over. (you should get one of these too, it gives you extra eshop stuff like Japanese NES games.
